Today's Special ~ Chicken Enchilada Soup

On these very cold and wintery days a good bowl of hot soup always hits the spot.  Homemade Gourmet makes wonderful Soup mixes that are so very easy to prepare! 



Our Chicken Enchilada Soup comes in a Two pack or a Pantry Staple size.  When ordering the Pantry Staple size, it comes with recipe cards as well.    Each individual packet serves up to eight.  I am never left without soup mix in my pantry!  


I like to add grated cheese, sour cream and homemade tortilla strips

(easy to make Homemade Toritlla Strips:  I take about six flour tortillas, and cut them into strips with a pizza cutter, place on my baking stone and put in preheated oven at 450 degrees for ten minutes or until golden brown)



Simply boil your water, add your soup mix, diced tomatoes, milk and cooked chicken.  Simmer for twenty minutes, top with a dollop of sour cream and tortilla strips and serve!

Tres Queso Breakfast Burrito (for Skillet Version, see my Sunrise Special Blog

The Tres Queso I have made a few times and the family has always enjoyed it.  I have made it for breakfast, never for dinner.  I decided to try the option of Breakfast Burrito tonight.  It was a hit!   It's a hearty one-skillet meal, and really easy to throw together.  You may substitute ground beef or turkey for a delightful dinner frittata.  Tonight I added ground sausage, eggs, shredded cheese, guacamole, sour cream, salsa and a dash of hot sauce.

I started by cooking the sausage, shredding the cheese and cracking the eggs.
I like to get all my ingredients ready to go!




Boil two cups of water and add Tres Queso Mix, saute covered for fifteen minutes



Add your sausage to the mix, and then the egg.  If making the frittata, do not mix, let the eggs cook and set up nicely.  When eggs are set, sprinkle with cheese and serve with salsa, and whatever other toppings you would like.  For the Burrito, you would stir the eggs into a scramble.




While your eggs are cooking you can prepare your tortilla's with all the fixin's.  Once the eggs are cooked, place your tortilla in the pan, heat and add egg/potato/sausage mixture





Roll that bad boy up and enjoy a wonderful Breakfast/Dinner Burrito!!  If you have a huge appetite, you can serve with rice and beans.  By the time I fill my tummy with this huge Burrito, I am stuffed!

Cranberry Almond Pasta Salad

Last night I prepared Homemade Gourmet's Cranberry Almond Pasta Salad for dinner.  This dish can be a side dish, or a main meal.  I love to add chicken to it and make it our main dish and serve it with salad and Fresh vegetables.

This is a Fresh tasting blend of herbs and spices combined with dried cranberries for a sweet and zesty meal on it's own!  You add, mayonnaise, apple cider vinegar, almonds,  chicken or turkey (optional)

Easy Preparation, just take a look:

All you need:  HG Pasta Mix, Cider Vinegar, Mayo, almonds, chicken/Turkey (optional)

 Boil the Pasta

While Pasta boils, prepare your chicken or Turkey

 I like to cook chicken in olive oil with fresh garlic and then sprinkle with HG's Garlic Basil Seasoning
It's fabulous!! 

While Pasta and Chicken are cooking, prepare your HG cream sauce.  Just add Mix, with Apple Cider Vinegar and  Mayonnaise and mix together

Pour sauce over chicken

Add Pasta and mix... Chill for a few hours and serve!  I have served it warm before as well!

Sunrise Delight!!


One of my favorite things to do is to wake up before the family and get the coffee going, bake some fresh bread and prepare a nice Saturday morning breakfast to surprise them with!  This dish, Tres Queso Breakfast Skillet (#02.8101/$6.75) is one of my favorites and so easy and quick to prepare!

This hearty one skillet meal is a muy bueno start for any day!  It includes the potatoes, all you add is ground sausage, eggs, optional shredded cheese!  It easily serves six.

Homemade Gourmet has another delicious Breakfast Skillet, called Presto Italiano Breakfast Skillet (#02.8100/$6.75)  It too,  quick and easy to prepare.  You can substitute ground beef or turkey for a delightful dinner frittata.  You add ground sausage, eggs, optional shredded cheese.  This meal serves six.

The Packers arrived in Dallas On Monday...

The Packers have made a vow to their fans that they will fight hard and bring that trophy back to Green Bay.  This will be the Packers' first appearance in a Super Bowl in 13 years.  It will be their fifth Super Bowl!

The Packers’ defensive line already made some headlines by traveling to Texas on Monday in cowboy outfits, complete with belts, boots, jackets and hats, mimicking those won by the offensive linemen back in training camp.  Defensive end Cullen Jenkins even purchased some rattlesnake-skin boots to accompany the rest of his gear.


A little history on the Packers:

The Green Bay Packers were founded on August 11, 1919 by Curly Lambeau and George Calhoun
The Packers became a professional franchise when they joined the newly formed American Professional Football Association on August 27, 1921. However, financial troubles plagued the team and the franchise had to be forfeited at the end of the season. Curly Lambeau found new backers the next year and regained the franchise for $250. Further troubles threatened to add more debt to the team, but local businessmen, known as the Hungry Five," got behind the team and formed the Green Bay Football Corporation.

The Packers have won 12 league championships, more than any other American professional football team. They have also won 3 Super Bowls.  Their arch-rivals theChicago Bears are second, with nine NFL championships (including one Super Bowl).  The Packers have the second most Hall of Famers (21, behind the Bears' 26). The Packers are also the only team to win three straight NFL titles, which they did twice (1929–1931 and 1965–67).

Sunday's Super Bowl will be a great game.  If you are a "Cheese Head" or a "Terrible Towel" owner, clear your calendar on Sunday, call some friends, grab a beer and eat some fabulous food and turn up that TV!!  It's going to be a great game!!

The Steelers are the oldest franchise in the AFC.  Pittsburgh has won more Super Bowl titles (six), won more AFC Championship Games (eight), played in fifteen, and hosted more conference championship games (eleven)  than any other AFC or NFC team.  The Steelers also won their most recent championship Super bowl XLIII, on February 1, 2009.
Steelers were founded on July 8, 1933, by Art Rooney.  The ownership of the Steelers has remained  within the Rooney family since it's founding.  The current owner, Art's son, Dan Rooney,  has given most of the control of the franchise to his son, Art Rooney II.
January 22, 2007, Mike Tomlin became the first African-American to be named head coach of the Pittsburgh Steelers in its 75 year history.  Tomlin also became the third consecutive Steelers Head Coach to go the the Super Bowl, equaling the Dallas Cowboys, Tom Landry, Jimmy Johnson and Barry Switzer, in the achievement.  At the age of 36, Tomlin was the youngest head coach to ever win the Super Bowl, and he is only the second African American coach to ever win the Super Bowl, Tony Dungy being the first.  The 2010 season made Tomlin the only coach to reach the Super Bowl twice before the age of 40.

Grilled Tomato and Chipotle Salsa

This spicy salsa is great over any grilled meat and fantastic as a dipper for tortilla chips or spicy Wonton Crisps.  This is really great as a relish on grilled hot dogs too!

Ingredients:
4  Roma Tomatoes
1/2  Onion, diced
3  Tablespoons fresh cilantro, chopped
1/2  Tablespoon Homemade Gourmet Chipolte Rub

Directions:
1.  Place Roma tooatoes on a pre-heated grill of medium heat.  They will fit nicely on the edges of a grill already filled with other items.  Cover grill and cook.  After 5 minutes, turn the tomatoes and continue to cook another 5 minutes.  The skin will begin to peel away when done.

2.  Let cool to touch and chop.  Toss with the reamining ingredients and serve immediately or chill.  Will keep refrigerated for up to one week.  

Grilled Vegetable Medley

Make extra of this great grilled medley because everyone will want seconds!  It's Delicious!

Ingredients:
1 carton grape tomatoes
1 package pearl onions (white or red), peeled
1 large carton button mushrooms, stems removed
Olive Oil
1 Homemade Gourmet Garlic basil Seasoning
Large metal skewers, or a package of wooden skewers
(if using wooden skewers, soak in water for several minutes before using)

Directions:
1.  Place tomatoes, onions and mushrooms on skewers.  Put each item on separate Skewers.  The tomatoes cook faster than the onions and mushrooms, so you will need them to be on separate skewers. 

2.  Rub each skewer with olive oil and place onto a pre-heated grill of medium heat.  The tomatoes will cook in about five minutes; onions and mushrooms about ten minutes.  Turn each halfway through cooking time.

3.  Remove from grill and slide off a skewer into a serving bowl or platter.  Drizzle with a little more olive oil and sprinkle generiously with Garlic Basil Seasoning.  Serve as a warm vegetable salad or use to top grilled steak or chicken. 

variation:  If using to top grilled steak, burgers or chiken, place over meat at end of grilling time.  Cover with a slice of provolone cheese, cover grill and let cheese melt (about five minutes).  Remove from grill and serve.  YUM!!!
